This course is designed to give students an introduction to brewing science. Over the course of eight sessions, the following topics will be covered; history of brewing, raw ingredients (water/yeast/barley/hops), brew house equipment/technology, cleaning/sanitation, home brewing, fermentation, recipe development, sensory analysis, beer styles, beer geography, the current state of craft beer and brewing procedures.

This course will alternate between a lecture format at the ACC Campus and hands-on experiences held at Altitude Chophouse and Brewery (sensory/ingredient analysis and brewing). While the majority of this class will focus in brewing as practiced in a commercial setting, the content will certainly be applicable to students interested in home brewing. As a culminating experience, students will collaborate to develop an original recipe to be brewed at Altitude Chophouse and Brewery for release to the public.
